青い（緑の）葉っぱや茎の部分です。
生、あるいは調理した青野菜の意味もあります。
Eat up your greens.(野菜を残さないで食べなさい。)
greensは単数形にしてa greenということはできません。でも間違えて使う人は少なからずいるようです。世界中の人が気にせずに使っていれば、いずれ準正用法になるでしょう。
*Spinach is a green.
では、one of the greensはどうでしょうか。それもだめです。複数名詞は不可算名詞ではありませんが、いつも複数形で使われる名詞です。oneはone greenということですから使えません。しかし、現実にはそういう間違いは見つかりますので、話す時にはあまり気にすることはないのですが、書く時には気をつけてください。
*Spinach is one of the greens.
数える場合には、数詞を避けて、many, some, any, a lot ofなどのおおざっぱな形容詞を使います。指示代名詞はtheseとthoseの複数形を使います。
We are growing many greens.
私達はたくさんの（種類の）葉っぱ系の野菜を作っています。
These greens originate in Mexico.
これらの葉野菜はもともとメキシコが産地です。
*This green tastes like spinach.
-->These greens taste like spinach.
Spinach is a type/kind of green vegetable.
ほうれん草は葉っぱ系の野菜です。

travels（旅行）やmanners（作法／行儀／マナー）が単数に分けることのできないように、greens（緑色野菜／青野菜）も単数に分けて使えない名詞です。vegetableでしたら可算名詞ですから単数で使えます。
greensを数えたければ、量で表現します。

a small amount of greens
a lot of greens
eat tons of greens

複数形ですから、動詞も複数呼応となります。
たとえば、mustard greens とは芥子菜（からしな）のことです。西洋芥子菜と日本芥子菜は葉っぱの形状が少し違いますが、ぴりっとした辛みがあるのは同じです。アブラナ科です。leaf mustardとも言います。
Mustard greens have a lot of vitamins.
芥子菜はいろいろなビタミンが豊富です。
Leafy greens contain nutrients good for the eye.
Which leafy greens are the healthiest?
Some say mustard greens are. They have a lot of vitamins.
単数で使いたければ、a green (leafy) vegetableとすればよいのです。
Spinach/Lettuce/Cabbage is a green (leafy) vegetable.
Spinach, lettuce and cabbage are green/leafy vegetables. They are called greens.
しかし、これもまちがえやすいため、a greenが使われる例を見かけることでしょう。話し言葉の時はそれほど気になりませんが、書く時には気をつけましょう。
*Spinach is a green.=>Spinach is a leafy vegetable.
greensは複数で、これを菜っ葉形の野菜の意味で単数形にして使うことができませんので、one of the greensという言い方もできません。しかし、one of ~の形で複数名詞を使うとなんとなくいいかなという感じになってしまうことは確かです。
*Spinach is one of these leafy greens. Spinach is one of these leafy vegetables.
Leafy vegetables are spring greens, winter greens, spinach, etc.
Some greens are sweeter than others.
色としてのgreen(緑色)は可算にも不可算にもなります。

これも分けることができない複数名詞です。日本語的感覚では分けてもよさそうなものですが、分けられません。

on my travelと単数形にしたい場合には、travelを形容詞的に扱ってもうひとつ名詞句を持って来なければいけません。

次のような文はときどき見かけます。
? *On one of the travels, I met a former Japanese prime minister.
違和感をほとんど感じませんが、よくよく考えるとoneがone travelとなってしまってよくないのです。travelsやgreens, rapids, mannersなど、あるいはまた海域のwatersなどの複数名詞はもやもやとした連続した不可分の構成素で成り立っていて、細かく分けることができないからです。
分けるとしたら、ある範囲とか種類とか、ボリュームとか重さなどで分けることはできます。
manners
mannersは質的な複数名詞ですから、数えることがあまりないようです。a variety ofとかa lot of、manyなどは使おうと思えば使えます。a kind of/a list of/an example ofなどが使われます。
There are so many manners we have to learn.
There are two important kinds of manners in this house.
Here is a list of good manners.
方法、やりかた、態度などの意味ではmannerは単数形でも使えます。wayよりも固い表現です。
Do you always handle the requests from customers in that manner?（そういうやり方で客に応対する。）
She sometimes treats people in a fake-polite manner.（慇懃無礼な扱いをする。）
rapids（早瀬）

*one rapid, *two rapids, *three rapidsなどのように数詞は使えませんが、goodsと同じように具体的でない数を示す形容詞や形容詞句のmany /a lot of/tens of/dozens of /hundreds ofなどは rapidsに使えます。
The Rio Grande has a lot of/hundreds of rapids.
種類やひろがりなどによって分類します。
You can see all sorts/kinds of rapids.
There are a number of rapids in this river.
You will know that there are various types of rapids.

呼応について
上記のrapidsの例文でもお分かりのように、複数名詞は複数動詞あるいはthese/thoseなどの指示形容詞と呼応します。
watersも同じです。ただし、主語がrapidsやwatersなのか、あるいはそれらのサイズなどなのかどうかを注意してください。
例えば、a stretch of watersは、厳密には複数として扱われるはずなのですが、stretchに焦点を当てて単数で呼応することがあります。この辺はstretchかwatersのどちらかが意識にあるかで決まるでしょう。
厳密な文法ではwatersは複数として扱います。a large number of peopleを例に取ればなぜだか分かるかと思います。しかし、どのくらい多いというのかという疑問文はnumberに焦点を当てて、How large is it?であって、How large are they?ではありません。
This is/These are the most dangerous stretch of waters.
そして、その海域の広さはと聞くような場合には、主語が広さ（size）となりますから、その場合はwatersが主語でなく、sizeという単数主語との呼応関係となります。

これも複数名詞です。意味は３つあります。
残り物
遺跡、遺物
遺骨、遺体
残り物はひとかたまりになっていてひとそろい、一組と考えられます。
Mike gave the remains of the meal to his hens.
マイクは食事の残りを彼の雌鳥に与えた。
遺跡もひとつひとつ数えればpiecesとかpillar（柱）などが見分けることができる名詞ですが、遺跡はそういうものがいっしょになっててひとつの場所となっていますから、小さく分けることができません。
They excavated the remains of a Roman temple.
遺骨も一組ということになります。
The University Leicester discovered the remains of Richard III in August 2012.
The remains of Buddha were cremated and the ashes were divided and placed in eight stupas.
仏陀の遺体は火葬に付され、灰は分けられ八つの納骨堂に納められた。(stupaはサンスクリット語に由来する語。日本語では卒塔婆になった。)
Kazuo Ishiguroさんの小説にThe Remains of the Day (1989)というのがありました。邦題は「日の名残り」です。
一日の残りというとどのあたりになるのでしょうか。午後から夕方だと考えられます。小説では主人公の晩年の人生という意味で使われています。
We spent the remains of the day wining and dining.
（一仕事終えた後）その日の残りの時間はワインを飲んでおいしい物を食べて過ごした。
この単語は連続する時間を表したり、一組とかひとそろいの印象がありますから、なぜ単数形のremainに分けられないか少し理解できるような気がしますが、皆さんはいかがでしょうか。領海とか海域の意味のwatersもなんとなく分かるような気がします。
