( a pair of ) pruning shearsあるいは( a pair of ) pruning scissorsです。

secateurs

I picked persimmons off the lower branches by cutting the stems with pruning shears/secateurs/hand pruners.

Then I trimmed the stem into a T-shape.

The T-shaped stem structure is important when they are put on a twisted two-strand nylon string.
You don’t need to tie the stem with such a string because you can put the T-shaped stem into the twist of the two strands.

In this way you can put the persimmons at roughly ten centimeter intervals.

I cut off the higher branches with pruning shears with longer handles.

To pick persimmons or cut off branches in much higher places, I used a long pole pruner, about two meters long. The pruner can be operated with a cable outside the pole. You can cut considerably thick branches with it. The severed branches don’t fall because it can keep holding them until you get them safely on the ground. Therefore, the fruits don’t get bruised.
